Dumpling flavor, no wrapper
Josh takes the flavors of a pork dumpling and puts them on the grill. Ground pork is seasoned with green onion, garlic, ginger, rice wine vinegar, sesame oil, liquid aminos and chili garlic sauce, formed into patties and grilled, then brushed with a sugar-free teriyaki or stir fry sauce. Sesame seeds and green onion tops finish them.
Why they come out right
- Press a small dimple in the center of each patty so it stays flat on the grill.
- Mix the meat only until it comes together, so the patties stay tender.
- Brush the sauce on near the end, so it adds flavor without burning.
- Josh pulls the patties at 155°F and lets carryover heat finish them.
Cooking them on a Sunstone
Josh's recipe page mentions the Sunstone Hybrid Grill among the grills for this recipe. On a hybrid you can run them over gas for an easy weeknight, or over charcoal and wood for more smoke. Watch his walkthrough of the hybrid to see the grill in action.

Shop the hybrid grills, including the 30" hybrid with infrared burner (SUNCHSZ30) and the 42" dual zone hybrid.
